Hello stranger, Merry Christmas! Sorry for the long silence…I am away visiting my parents for the holidays and the Internet doesn’t always cooperate. I haven’t been able to post as often as I would have liked. But, it feels so good to be back home for the holidays surrounded by family and childhood friends. Long time no talk–Hope you all had a very Happy Thanksgiving 🙂 I celebrate with family and friends #FriendsgivingPotluck.  It felt so good to be home! I’m thankful for the time spent with them. I’m also thankful that the semester is almost over! No more papers or tests. More time with friends and family. Guilt free Netflix binge. More Sleep…I can’t wait! Because I’m in such a festive mode, I sharing some of my Thanksgiving eats AND a new recipe/how to use your thanksgiving leftovers. Sweet Potato and Spinach Egg Muffin topped with Gruyere + WIAW

Happy No Waste Wednesday!

Every Wednesdays I create a new dish using the ingredients from Monday in hopes that you guys don’t get tired of eating the same leftovers, forget about them or worst throw them out!

You’ve heard me talk about the importance of eating breakfast and you’ve also heard me talk about my hectic schedule. Finding dishes that are quick and convenience are crucial! While I typically go for a smoothie or a yogurt bowl in the morning there are times when I crave something savory that’s just as quick and convenient.  In today’s No Waste Wednesday (NWW) recipe I’m using my leftover sweet potato noodles to create scrumptious and hearty egg muffins. They are perfect grab and go breakfast when you’re pressed for time.
